From the second highest vineyard in Elqui Valley, Chile, Pedro Ximenez (the grape typically found in Sherry) is a stylish white wine that offers appealing aromas and flavors of white flowers, fennel, and some spiciness, which flavors are balanced by fresh acidity. Very dry with high acidity thanks to the altitude as well as tension and minerality. Serve it with a range of foods especially shellfish and other seafood. A refreshing palate with cleansing flavors of citrus and ginger. Great alternative to Sauvignon Blanc!
